Oat Porridge with Apple, Cashew and Almond

Ingredients:
2oz (1/2 cup) rolled oats
6 fl oz (3/4 cup) water
2 fl oz (1/4 cup) apple juice
1 naturally sweet apple, peeled, cored and diced
4 fl oz (1/2 cup) milk
2 T spn Almond grounded
2 T spn Cashew Nut grounded

Directions:

Pour the water and juice into a saucepan and bring to the boil.
Add the diced apple, then sprinkle in the rolled oats, stirring well.
Return the mixture to the boil, then reduce the heat to a gentle simmer.
Add the Almond and Cashew r and cook until thick (10-15 mins).
Before serving, stir in the milk.
If this recipe is too lumpy for your baby, you can puree it directly in the pot using a hand blender.



Baked Cheese sticks

Ingredients:

4 Bread Crumbs (finely crushed to Bread crust or left over Bread)
1 teaspoon garlic powder
1/4 cup all-purpose flour
2 egg whites
2 tablespoons water
Salt to Taste( Mozarella Cheese is naturally salty in taste, avoid adding salt or stick to a pinch of it)
1 (8 ounce) package lowfat mozzarella cheese

Directions:

Set oven to 400 degrees.
Lightly grease a medium pan lined with foil.
In a large bowl, combine the Bread Crumbs,garlic  and salt.
In another small bowl place in the flour.
In another bowl thoroughly beat the egg whites with the 2 tbsp of water.
Cut the mozzarella cheese into 12 sticks, approximately 2-3/4-inches in length.
Dip the cheese sticks in the flour, then in the egg/water mix, then in the cereal mixture (make sure that the cheese sticks are well coated with egg mix and cereal mix, as the cheese will run out while baking).
Arrange cheese sticks on the baking sheet.
Allow the sticks to set for 30 minutes before baking.
Bake in a 400 degree oven for about 8 minutes, until cheese is soft and sticks are lightly browned.

Turkey-Corn Chowder

Ingredients

2 potatoes, peeled and diced
1 smoked turkey legs
2 T spoon butter
1/2 Onion, chopped
1 tablespoons all-purpose flour
1/2 (15 ounce) carton chicken broth
1/2 (8 ounce) package frozen corn
1/2 quart light cream
salt and ground black peppe

Directions

Place the potatoes into a pot and cover with salted water; bring to a boil, reduce heat to medium-low, cover, and simmer until tender,
about 20 minutes. Drain and allow to steam dry for a minute or two. Cut the meat from the turkey legs, discarding the bones and tendons.
Chop the turkey meat and set aside.

Heat the butter in a soup pot over medium heat; cook the onion in the butter until translucent, about 8 minutes. Sprinkle the flour over
the butter and onion; stir constantly until the butter and flour form a paste. Allow the paste to fry for about 1 minute. Whisk in the chicken broth,
Potatoes, turkey meat, and corn; stir until the mixture comes to a low boil and thickens, about 5 minutes. With a potato masher, slightly mash
the potatoes and vegetables until the potatoes look rounded off. Pour in the cream, bring soup back to a simmer, and allow to cook without boiling
for 5 minutes, stirring constantly. Add Salt and pepper to taste.

Veggie Snack, Sweet potato sticks

It is a yummy snack, also perfect choice for dinner

Ingredients:
Sweet Potatos / Yams - 1
Sugar - 4 T spn
Salt - pinche
Corn flour or All purpose flour - 1/2 cup
Butter

Peel off and Dice the Sweet Potatoes about 1 inch wide each. 
Mix Flour, Salt, Sugar well and add diced sweet potato pieces.

On a stove top, Heat the butter and fry about 4 to 5 mins, the pieces until the sides look little roasted.
Remove and Bake them at 450 F for 15 min.










Veggies: Green Beans, Carrots and mung beans

I heard it is hard to make toddler eat veggies, here is the recipe that helped me, my 15 months old loves this..

Ingredients
Butter or Olive Oil
Garlic - 1 clove
Tomato - 1
Green Beans  - 10
Carrots - 2
Mung Beans - 1/4 cup

Soak the dry beans in water for about 4 hrs. If not, you can use the canned beans as well.

Slice the Garlic, cut Carrots into medium size pieces, Green Beans and Tomato. Note: not to make Beans too small, so you can easily separate them.

Heat the olive Oil or Butter, I prefer Olive Oil over butter for various health benefits.
Add Garlic fry it a bit, no need to wait until it turns Pink or Brown.
Tomato, Green Beans and Carrots.
Add little Salt, fry about 7 to 10 min.
Add Mung Beans, and cook in slow flame. Best alternative to cut the cooking time is to use the pressure cooker.
Be careful when handling hot pressure cooker or cooking pots.

When it is done, separate the Beans and Mash the rest of the content a little, so it becomes smooth to drink as stoup. Wait while it cools down and serve.
